Wangyach Bharta English Simpal Recipes (Baingan Bharta) is a delicious and popular Marathi dish made from roasted eggplant (baingan) mashed with spices. Here’s a simple recipe to prepare Wangyach Bharta:
Ingredients:

2 large eggplants (baingan)

1 tablespoon oil

1 onion (finely chopped)

1-2 green chilies (chopped)

1 tomato (chopped)
-
1 teaspoon ginger-garlic paste
-
1/2 teaspoon turmeric powder

1 teaspoon red chili powder (adjust to taste)

1 teaspoon coriander powder
-
Salt to taste

Fresh coriander leaves for garnish
Method:

Roast the Eggplant:

Wash the eggplants thoroughly. Make a few slits on the eggplant with a knife.

Heat a direct flame on your gas stove or use a grill pan. Place the eggplants on the flame or pan and roast them, turning occasionally until the skin is charred, and the inside becomes soft (about 15 minutes).

Peel the skin off the eggplants and mash the flesh with a fork or your hands.
