Wangyach Bharta English Simpal Recipes (Baingan Bharta) is a delicious and popular Marathi dish made from roasted eggplant (baingan) mashed with spices. Here’s a simple recipe to prepare Wangyach Bharta:

Ingredients:

  • 2 large eggplants (baingan)

  • 1 tablespoon oil

  • 1 onion (finely chopped)

  • 1-2 green chilies (chopped)

  • 1 tomato (chopped)

  • 1 teaspoon ginger-garlic paste

  • 1/2 teaspoon turmeric powder

  • 1 teaspoon red chili powder (adjust to taste)

  • 1 teaspoon coriander powder

  • Salt to taste

  • Fresh coriander leaves for garnish

Method:

  1. Roast the Eggplant:

    • Wash the eggplants thoroughly. Make a few slits on the eggplant with a knife.

    • Heat a direct flame on your gas stove or use a grill pan. Place the eggplants on the flame or pan and roast them, turning occasionally until the skin is charred, and the inside becomes soft (about 15 minutes).

    • Peel the skin off the eggplants and mash the flesh with a fork or your hands.

  2. Prepare the Masala:

    • In a pan, heat 1 tablespoon of oil. Add chopped onions and sauté them until golden brown.

    • Add chopped tomatoes and cook until they soften and blend into the mixture.

    • Add the mashed eggplant to this masala mixture and mix well. Cook it on low heat for about 5-7 minutes, allowing the flavors to blend together.

Serving:

Serve Wangyach Bharta hot with chapati, paratha, or rice. It's a flavorful, smoky dish that’s perfect as a side or main course.
