Here’s a simple Sattu Kachori recipe in English, perfect for a delicious snack! Sattu (roasted gram flour) is a popular ingredient, especially in Bihar, Uttar Pradesh, and other North Indian English Simpal Recipes regions. It is filled with flavorful spices and stuffed in a crisp kachori.
Sattu Kachori Recipe
Ingredients:
For the Dough:

1 cup whole wheat flour (atta)

2 tbsp semolina (sooji)

2 tbsp oil or ghee
-
1/2 tsp carom seeds (ajwain)

1/2 tsp salt (adjust to taste)

Water (as needed to knead the dough)
For the Filling:

1 cup sattu flour (roasted gram flour)
-
1 tbsp cumin powder (jeera powder)
-
1 tbsp coriander powder (dhania powder)
-
1/2 tsp red chili powder (adjust to taste)
-
1/4 tsp turmeric powder (optional)
-
1 tbsp ginger, finely chopped or grated
-
1-2 green chilies, finely chopped
-
1 tbsp fresh coriander leaves, chopped
-
1-2 tbsp lemon juice
-
1 tbsp garam masala
-
Salt, to taste
-
1-2 tbsp oil (for cooking the filling)
For Frying:

Oil (for deep frying)
Instructions:
1. Prepare the Dough:

In a mixing bowl, add whole Hindi Simpal Recipes wheat flour, semolina, carom seeds, salt, and oil or ghee.

Mix well and gradually add water to knead a smooth and firm dough.

Cover the dough with a damp cloth and let it rest for 20-30 minutes.
2. Prepare the Filling:

Heat a little oil in a pan and add chopped ginger and green chilies. Sauté for a minute.

Add sattu flour and roast it lightly on low heat for 2-3 minutes. Make sure it doesn’t burn.

Remove the pan from heat and add cumin powder, coriander powder, red chili powder, garam masala, salt, and lemon juice.

Add chopped coriander leaves and mix everything well. The filling should have a slightly crumbly texture but should stick together when pressed.
3. Shape the Kachoris:

Divide the dough into small equal-sized balls (about 10-12).

Roll each ball into a small flat circle (about 3-4 inches in diameter) using a rolling pin.

Place a generous amount of sattu filling in the center of the dough circle.

Carefully fold the edges to seal the filling inside, pinching it together.

Gently flatten the filled dough ball with your palms to form a small round kachori.
4. Fry the Kachoris:

Once the oil is hot, gently slide in the kachoris, one at a time. Fry on medium heat, turning occasionally, until they puff up and turn golden brown and crisp on all sides.

5. Serve:

Serve sattu kachoris hot with tamarind chutney or green chutney.
