Maddur Vada is a popular South Indian snack that is crispy on the outside and soft on the inside. It’s a savory fritter made from a mix of rice English Simpal Recipes flour, all-purpose flour, and various spices. Here's a simple recipe to make Maddur Vada at home:

Ingredients:

  • Rice Flour: 1 cup

  • Chopped Coriander Leaves: 2 tablespoons

  • Cumin Seeds: 1/2 teaspoon
  • Black Sesame Seeds: 1 teaspoon
  • Salt: to taste
  • Baking Soda: 1/4 teaspoon
  • Water: as needed
  • Oil: for deep frying

Instructions:

  1. Prepare the Mixture:

    • In a large mixing bowl, combine the rice flour and all-purpose flour.

    • Mix in chili powder, cumin seeds, black sesame seeds, salt, and baking soda.
  2. Make the Dough:

    • Gradually add water to the mixture, little by little, to form a thick, smooth batter. The batter should be thick enough to hold its shape when dropped into hot oil.
  3. Heat the Oil:

    • Heat oil in a deep frying pan over medium heat. To test if the oil is ready, drop a small piece of the batter into the oil; if it sizzles and comes up, the oil is ready for frying.
  4. Shape the Vadas:

    • Take a small portion of the batter and flatten it slightly between your palms or on a piece of parchment paper to form a round, flat shape. You can also use your fingers to shape the vadas.
  5. Fry the Vadas:

    • Carefully slide the shaped batter into the hot oil. Fry in batches, ensuring not to overcrowd the pan.
    • Fry the vadas until they turn golden brown and crispy, about 3-4 minutes on each side.

  6. Serve:
