Here's a simple English Simpal Recipes recipe for Kadai Chicken, a flavorful and aromatic Indian chicken dish cooked in a "kadai" (a type of wok). This recipe is easy to follow and perfect for a delicious meal.

Kadai Chicken Recipe

Ingredients

  • Chicken: 500 grams, cut into pieces
  • Onions: 2 large, finely chopped
  • Tomatoes: 2 large, finely chopped
  • Green Bell Pepper (Capsicum): 1, chopped
  • Ginger-Garlic Paste: 1 tablespoon
  • Yogurt: 1/2 cup
  • Cooking Oil: 3 tablespoons
  • Kadai Masala: (You can use store-bought or make your own)
    • Coriander Seeds: 1 tablespoon
    • Cumin Seeds: 1 teaspoon
    • Fennel Seeds: 1 teaspoon
    • Dry Red Chilies: 4-5 (adjust to taste)
    • Black Peppercorns: 1/2 teaspoon
    • Cloves: 2
    • Cardamom Pods: 2
    • Cinnamon Stick: 1 small piece
  • Turmeric Powder: 1/2 teaspoon
  • Red Chili Powder: 1 teaspoon (adjust to taste)
  • Garam Masala: 1/2 teaspoon
  • Salt: to taste
  • Fresh Coriander Leaves: for garnish

Instructions

  1. Prepare Kadai Masala:

    • Dry roast coriander Hindi Simpal Recipes seeds, cumin seeds, fennel seeds, dry red chilies, black peppercorns, cloves, cardamom pods, and cinnamon stick in a pan over medium heat until aromatic. Let it cool, then grind to a coarse powder. Set aside.
  2. Cook Chicken:

    • Heat oil in a kadai or large pan over medium heat.
    • Add finely chopped onions and sauté until golden brown.
    • Add ginger-garlic paste and cook until the raw smell disappears.
    • Add chopped tomatoes and cook until they become soft and oil starts separating.
    • Stir in the yogurt and cook for 2-3 minutes.
  3. Add Spices:

    • Add turmeric powder, red chili powder, and the freshly ground kadai masala. Mix well.

  4. Simmer:

  5. Finish:

    • Sprinkle garam masala and mix well.
    • Garnish with fresh coriander leaves.
  6. Serve:

    • Serve hot with naan, roti, or steamed rice.
