Kadai Chicken Recipe
Ingredients
- Chicken: 500 grams, cut into pieces
- Onions: 2 large, finely chopped
- Tomatoes: 2 large, finely chopped
- Green Bell Pepper (Capsicum): 1, chopped
- Ginger-Garlic Paste: 1 tablespoon
- Yogurt: 1/2 cup
- Cooking Oil: 3 tablespoons
- Kadai Masala: (You can use store-bought or make your own)
- Coriander Seeds: 1 tablespoon
- Cumin Seeds: 1 teaspoon
- Fennel Seeds: 1 teaspoon
- Dry Red Chilies: 4-5 (adjust to taste)
- Black Peppercorns: 1/2 teaspoon
- Cloves: 2
- Cardamom Pods: 2
- Cinnamon Stick: 1 small piece
- Turmeric Powder: 1/2 teaspoon
- Red Chili Powder: 1 teaspoon (adjust to taste)
- Garam Masala: 1/2 teaspoon
- Salt: to taste
- Fresh Coriander Leaves: for garnish
Instructions
Prepare Kadai Masala:
- Dry roast coriander Hindi Simpal Recipes seeds, cumin seeds, fennel seeds, dry red chilies, black peppercorns, cloves, cardamom pods, and cinnamon stick in a pan over medium heat until aromatic. Let it cool, then grind to a coarse powder. Set aside.
Cook Chicken:
- Heat oil in a kadai or large pan over medium heat.
- Add finely chopped onions and sauté until golden brown.
- Add ginger-garlic paste and cook until the raw smell disappears.
- Add chopped tomatoes and cook until they become soft and oil starts separating.
- Stir in the yogurt and cook for 2-3 minutes.
Add Spices:
- Add turmeric powder, red chili powder, and the freshly ground kadai masala. Mix well.
