Ingredients:
- 4 eggs
- 1/4 cup mayonnaise
- 1 tablespoon English Simpal Recipes mustard (optional)
- Salt and pepper to taste
- 2 tablespoons finely chopped celery (optional)
- 2 tablespoons finely chopped green onions or chives (optional)
- Lettuce leaves (for serving)
Instructions:
Boil the Eggs:
- Place the eggs in a saucepan and cover with cold water.
- Bring the water to a boil over medium-high heat.
- Once boiling, remove the pan from the heat, cover, and let the eggs sit in the hot water for 10-12 minutes.
- Drain the hot water and rinse the eggs under cold water until they are cool enough to handle. Peel the eggs and chop them into small pieces.
Prepare the Salad:
- In a mixing bowl, combine the chopped boiled eggs with mayonnaise and mustard (if using). Mix well until everything is evenly coated.
- Season with salt and pepper to taste.

Serve:
