Ingredients:
- 4 boiled eggs, peeled and halved
- 1 large English Simpal Recipes onion, finely chopped
- 2 tomatoes, finely chopped
- 2-3 green chilies, slit lengthwise
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala powder
- Salt to taste
- 2 tablespoons oil
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- A few curry leaves
- Fresh coriander leaves for garnish
Instructions:
Prepare Eggs: Boil the eggs, peel them, and cut each egg into halves. Keep aside.
Make Curry Base:
- Heat oil in a Hindi Simpal Recipe span over medium heat. Add mustard seeds and let them splutter.
- Add cumin seeds and curry leaves. Saute for a few seconds until fragrant.
- Add chopped onions and green chilies. Saute until onions turn golden brown.
Add Spices:
- Add ginger-garlic paste and saute for a minute until the raw smell disappears.
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a minute.
Cook Tomatoes:
- Add chopped tomatoes and cook until they turn soft and oil starts to separate from the masala.
Simmer Curry:
- Pour water as Marathi Simpale Recipes needed to achieve desired consistency of the curry. Bring it to a boil.
Add Eggs:
- Gently add the boiled egg halves to the curry. Coat them with the gravy. Cover and simmer for 5-7 minutes on low heat to allow the flavors to meld.
Finish Off:
- Sprinkle garam masala powder and mix gently. Cook for another minute.
- Garnish with freshly chopped coriander leaves.
