English Simpal Recipes

Ingredients:

  • 1 cup red lentils (masoor dal)
  • 4 cups water
  • 1 medium onion, finely chopped
  • 2 medium tomatoes, chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 2 green chilies, slit (optional)
  • 1 tsp turmeric powder
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • 1/2 tsp red chili powder (adjust to taste)
  • 2 tbsp ghee or vegetable oil
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)
  • Juice of 1 lemon (optional)

Instructions:

  1. Rinse the Lentils:

    • Rinse the red lentils under cold water until the water runs clear.
  2. Cook the Lentils:

    • In a large pot, combine the lentils with 4 cups of water and add the turmeric. Bring to a boil, then reduce the heat and simmer for about 20-25 minutes, or until the lentils are soft and mushy. Skim off any foam that forms on top.
  3. Prepare the Tadka (Tempering):

    • In a separate pan, heat the ghee or oil over medium heat. Add the cumin seeds and mustard seeds. Once they start to splutter, add the finely chopped onions and sauté until golden brown.
    • Add the minced garlic, ginger, and green chilies (if using). Sauté for another 2-3 minutes until fragrant.
    • Add the chopped tomatoes, ground coriander, red chili powder, and salt. Cook until the tomatoes break down and the oil starts to separate from the mixture.

  4. Combine and Cook:

    • Add the cooked lentils to the pan with the tomato-onion mixture. Mix well and let it simmer for another 10 minutes. If the dal is too thick, you can add a little water to reach your desired consistency.
    • Stir in the garam masala and simmer for another 2 minutes.
  5. Finish and Serve:

    • Taste and adjust the seasoning. Add lemon juice if desired.
    • Garnish with fresh cilantro.
    • Serve hot with rice, naan, or roti.
