Dumpling Dough

Ingredients:

2 cups all-purpose flour

1/2 teaspoon salt

3/4 cup warm water

Instructions:

In a large mixing bowl, combine the flour and salt.

Gradually add the warm water while stirring with a fork or chopsticks until a shaggy dough forms.

Knead the dough on a floured surface for about 10 minutes until it becomes smooth and elastic.

Cover the dough with a damp cloth and let it rest for at least 30 minutes.

Dumpling Filling

Ingredients:

1/2 lb ground pork (or chicken, beef, or tofu for a vegetarian option)

1 cup finely chopped cabbage

1/2 cup finely chopped green onions

2 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon sesame oil

1 teaspoon grated ginger

1/2 teaspoon salt

1/4 teaspoon ground black pepper

Instructions:

In a large bowl, combine the ground meat, cabbage, green onions, garlic, soy sauce, sesame oil, ginger, salt, and pepper. Mix until well combined.

Assembling the Dumplings

Divide the rested dough into four equal parts. Roll each part into a log and cut each log into 10 pieces, making about 40 small dough pieces.

Roll each dough piece into a small, thin circle about 3 inches in diameter.

Place a teaspoon of filling in the center of each dough circle.

Fold the dough over the filling to form a half-moon shape. Press the edges together to seal, pleating as you go to create a crimped edge.

Cooking the Dumplings

Option 1: Boiling

Bring a large pot of water to a boil. Add the dumplings in batches to avoid overcrowding.

Cook the dumplings until they float to the surface and then let them cook for an additional 2-3 minutes.

Remove with a slotted spoon and serve.

Option 2: Pan-Frying

Heat a tablespoon of oil in a large skillet over medium-high heat.

Option 3: Steaming

Arrange the dumplings in a single layer in a steamer basket lined with parchment paper or cabbage leaves to prevent sticking.

Steam over boiling water for about 10-12 minutes, until the dumplings are cooked through.

Dipping Sauce

Ingredients:

3 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon sugar

1 tablespoon finely chopped green onions

1 teaspoon chili flakes or chili oil (optional)

Instructions:

In a small bowl, combine all the dipping sauce ingredients and stir until the sugar is dissolved.
