Instructions:
Prepare Sushi Rice:
- Rinse the sushi rice under cold water until the water runs clear.
- Combine the rice and water in a rice cooker and cook according to the rice cooker instructions.
- In a small saucepan, heat the rice vinegar, sugar, and salt over medium heat until the sugar and salt dissolve. Do not boil.
- Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Let it cool to room temperature.
Prepare the Fillings:
- Tempura Shrimp: If using store-bought, follow the package instructions. If making homemade, dip shrimp in tempura batter and fry until golden brown. Drain on paper towels.
- Avocado: Halve, pit, and thinly slice the avocado.
- Cucumber: Julienne the cucumber into thin strips.
- Crab Meat: Shred the imitation crab meat, if using.
Assemble the Dragon Roll:
- Lay a bamboo sushi mat on a flat surface and cover it with plastic wrap.
- Place a sheet of nori (seaweed) on the plastic wrap.
- Wet your hands with a mixture of water and a bit of rice vinegar to prevent sticking, then spread an even layer of sushi rice over the nori, leaving a 1-inch border at the top.
- Sprinkle sesame seeds over the rice for added flavor.
- Carefully flip the nori sheet so the rice is facing down on the plastic wrap.
- Arrange the tempura shrimp, cucumber, and avocado slices in the center of the nori.
- Using the bamboo mat, tightly roll the sushi, pressing gently to shape it into a log. Make sure the seam is on the bottom to seal the roll.
- Place thin slices of avocado on top of the roll, overlapping them slightly to resemble dragon scales.
- Add pieces of unagi or grilled eel on top of the avocado slices if desired.
- Using the bamboo mat, press gently to adhere the toppings to the roll.
Finishing Touches:
- Drizzle eel sauce over the top of the roll.
- Sprinkle with masago or tobiko for a pop of color.
- Slice the roll into bite-sized pieces using a sharp knife dipped in water.
- Serve with soy sauce, wasabi, and pickled ginger on the side.
Enjoy your homemade Dragon Roll!
