Instructions:

Prepare Sushi Rice:

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine the rice and water in a rice cooker and cook according to the rice cooker instructions.
  3. In a small saucepan, heat the rice vinegar, sugar, and salt over medium heat until the sugar and salt dissolve. Do not boil.
  4. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Let it cool to room temperature.

Prepare the Fillings:

  1. Tempura Shrimp: If using store-bought, follow the package instructions. If making homemade, dip shrimp in tempura batter and fry until golden brown. Drain on paper towels.
  2. Avocado: Halve, pit, and thinly slice the avocado.
  3. Cucumber: Julienne the cucumber into thin strips.
  4. Crab Meat: Shred the imitation crab meat, if using.

Assemble the Dragon Roll:

  1. Lay a bamboo sushi mat on a flat surface and cover it with plastic wrap.
  2. Place a sheet of nori (seaweed) on the plastic wrap.
  3. Wet your hands with a mixture of water and a bit of rice vinegar to prevent sticking, then spread an even layer of sushi rice over the nori, leaving a 1-inch border at the top.
  4. Sprinkle sesame seeds over the rice for added flavor.
  5. Carefully flip the nori sheet so the rice is facing down on the plastic wrap.
  6. Arrange the tempura shrimp, cucumber, and avocado slices in the center of the nori.
  7. Using the bamboo mat, tightly roll the sushi, pressing gently to shape it into a log. Make sure the seam is on the bottom to seal the roll.
  8. Place thin slices of avocado on top of the roll, overlapping them slightly to resemble dragon scales.
  9. Add pieces of unagi or grilled eel on top of the avocado slices if desired.
  10. Using the bamboo mat, press gently to adhere the toppings to the roll.

Finishing Touches:

  1. Drizzle eel sauce over the top of the roll.
  2. Sprinkle with masago or tobiko for a pop of color.
  3. Slice the roll into bite-sized pieces using a sharp knife dipped in water.
  4. Serve with soy sauce, wasabi, and pickled ginger on the side.

Enjoy your homemade Dragon Roll!
