Blackberry and Lime Bakewell Tart
This delightful tart combines the tartness of blackberries and the zing of lime with English Simpal Recipes the classic almond flavor of a Bakewell tart. Here’s a simple recipe to make this delicious dessert.
Ingredients:
For the Pastry:
- 200g plain flour
- 100g cold unsalted butter, cubed
- 2 tbsp icing sugar
- 1 egg yolk
- 2-3 tbsp cold water
For the Filling:
- 150g blackberries
- Zest and juice of 1 lime
- 100g unsalted butter, softened
- 100g caster sugar
- 2 eggs
- 100g ground almonds
- 25g plain flour
- 1 tsp almond extract
- 50g blackberry jam
For the Topping:
- A handful of sliced almonds
- Icing sugar for dusting
Instructions:
Make the Pastry:
- In a bowl, combine Hindi Simpal Recipes the flour and icing sugar.
- Rub in the cold butter until the mixture resembles breadcrumbs.
- Add the egg yolk and enough cold water to bring the dough together.
- Form the dough into a disc, wrap it in cling film, and chill in the fridge for about 30 minutes.
Prepare the Tart Shell:
- Preheat the oven to 180°C (350°F).
- Roll out the chilled pastry on a floured surface and line a 23cm tart tin.
- Prick the base with a fork, line with baking paper, and fill with baking beans.
- Blind bake for 15 minutes, then remove the baking beans and paper, and bake for another 5 minutes until golden.
- Allow to cool.
Make the Filling:
- Beat together the Marathi Simpale Recipes softened butter and caster sugar until light and fluffy.
- Gradually add the eggs, one at a time, beating well after each addition.
- Stir in the ground almonds, plain flour, lime zest, lime juice, and almond extract.
Assemble the Tart:
- Spread the blackberry jam over the base of the cooled tart shell.
- Evenly distribute the blackberries on top of the jam.
- Spoon the almond filling over the blackberries and smooth the top.
- Sprinkle with sliced almonds.
Bake the Tart:
- Bake in the preheated oven for 25-30 minutes until the filling is set and golden brown.
- Allow the tart to cool in the tin.
Serve:
- Once cooled, dust with icing sugar.
- Slice and serve with a dollop of cream or a scoop of vanilla ice cream.
