Blackberry and Lime Bakewell Tart

This delightful tart combines the tartness of blackberries and the zing of lime with English Simpal Recipes the classic almond flavor of a Bakewell tart. Here’s a simple recipe to make this delicious dessert.

Ingredients:

For the Pastry:

  • 200g plain flour
  • 100g cold unsalted butter, cubed
  • 2 tbsp icing sugar
  • 1 egg yolk
  • 2-3 tbsp cold water

For the Filling:

  • 150g blackberries
  • Zest and juice of 1 lime
  • 100g unsalted butter, softened
  • 100g caster sugar
  • 2 eggs
  • 100g ground almonds
  • 25g plain flour
  • 1 tsp almond extract
  • 50g blackberry jam

For the Topping:

  • A handful of sliced almonds
  • Icing sugar for dusting

Instructions:

  1. Make the Pastry:

    1. In a bowl, combine Hindi Simpal Recipes the flour and icing sugar.
    2. Rub in the cold butter until the mixture resembles breadcrumbs.
    3. Add the egg yolk and enough cold water to bring the dough together.
    4. Form the dough into a disc, wrap it in cling film, and chill in the fridge for about 30 minutes.
  2. Prepare the Tart Shell:

    1. Preheat the oven to 180°C (350°F).
    2. Roll out the chilled pastry on a floured surface and line a 23cm tart tin.
    3. Prick the base with a fork, line with baking paper, and fill with baking beans.
    4. Blind bake for 15 minutes, then remove the baking beans and paper, and bake for another 5 minutes until golden.
    5. Allow to cool.
  3. Make the Filling:

    1. Beat together the Marathi Simpale Recipes softened butter and caster sugar until light and fluffy.
    2. Gradually add the eggs, one at a time, beating well after each addition.
    3. Stir in the ground almonds, plain flour, lime zest, lime juice, and almond extract.
  4. Assemble the Tart:

    1. Spread the blackberry jam over the base of the cooled tart shell.
    2. Evenly distribute the blackberries on top of the jam.
    3. Spoon the almond filling over the blackberries and smooth the top.
    4. Sprinkle with sliced almonds.
  5. Bake the Tart:

    1. Bake in the preheated oven for 25-30 minutes until the filling is set and golden brown.
    2. Allow the tart to cool in the tin.
  6. Serve:

    1. Once cooled, dust with icing sugar.
    2. Slice and serve with a dollop of cream or a scoop of vanilla ice cream.
