Ingredients:
- 200 grams English Simpal Recipes self-raising flour
- 200 grams caster sugar
- 200 grams unsalted butter (softened)
- 4 large eggs
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 2-3 tablespoons milk (if needed)
- 200 grams raspberry or strawberry jam
- 200 ml double cream or whipped cream (optional)
- Icing sugar (for dusting)
Method:
Preparing the Cake:
Preheat the Oven: Preheat your oven to 180°C (350°F) and grease and line two 8-inch (20cm) round cake tins with parchment paper.
Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and caster sugar together until light and fluffy.
Add Eggs: Beat in the eggs one at a time, mixing well after each addition. If the mixture starts to curdle, add a tablespoon of flour.
Add Vanilla: Stir in the vanilla extract.
Combine Dry Ingredients: Sift the self-raising flour and baking powder together, then gently fold into the butter and sugar mixture.Hindi Simpale Recipes
Add Milk: If the batter is too thick, add a little milk, one tablespoon at a time, until the batter reaches a dropping consistency.
Divide Batter: Divide the batter evenly between the two prepared cake tins and smooth the tops.
Bake: Bake in the preheated oven for 20-25 minutes, or until the cakes are golden and a toothpick inserted into the center comes out clean.
Cool: Allow the cakes to cool in the tins for 10 minutes, then turn out onto a wire rack to cool completely.
Assembling the Cake:

Spread Jam: Once the cakes are completely cool, spread the jam evenly over the surface of one of the cakes.
Add Cream (Optional): Spread the whipped cream over the jam, if using.
Sandwich Cakes: Place the second cake on top of the first, pressing down gently.
Dust with Icing Sugar: Dust the top of the cake with icing sugar just before serving.
