Ingredients:
For the Chicken Marinade:
- 500g boneless chicken breast or thighs, cut into bite-sized pieces
- 1 tablespoon yogurt
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- Salt to taste

- 3 tablespoons vegetable oil
- 1 large onion, finely chopped
- 2 medium tomatoes, chopped
- 1 tablespoon tomato paste
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 tablespoon ginger-garlic paste
- 2 green chilies, slit lengthwise
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon garam masala
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 large green bell pepper, cut into strips
- 1 large red bell pepper, cut into strips
- 1/2 cup water
- Salt to taste
- Fresh coriander leaves, chopped, for garnish

Marinate the Chicken:
- In a bowl, mix the chicken pieces with yogurt, ginger-garlic paste, turmeric powder, red chili powder, and salt.
- Cover and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.
Prepare the Curry:
- Heat the oil in a large pan or wok over medium heat.
- Add cumin seeds and mustard seeds. Let them sizzle for a few seconds until fragrant.
- Add the chopped onions and sauté until golden brown.
- Add the ginger-garlic paste and green chilies. Sauté for another minute until the raw smell disappears.
- Add the chopped tomatoes and tomato paste. Cook until the tomatoes are soft and the oil begins to separate from the mixture.
Cook the Chicken:
- Add the marinated chicken to the pan. Cook on high heat until the chicken is no longer pink.
- Add ground coriander, ground cumin, garam masala, turmeric powder, and red chili powder. Mix well to coat the chicken with the spices.
Add Bell Peppers:
- Add the green and red bell peppers. Stir-fry for a few minutes until they are slightly tender but still crisp.
- Pour in 1/2 cup of water to create a sauce. Stir well and bring to a simmer.
- Reduce the heat and let it cook for 10-15 minutes, or until the chicken is cooked through and the flavors have melded together. Adjust salt to taste.
Garnish and Serve:
- Garnish with freshly chopped coriander leaves.
- Serve hot with steamed rice, naan, or roti.
