English Simpal Recipes

Ingredients:

For the Chicken Marinade:

  • 500g boneless chicken breast or thighs, cut into bite-sized pieces
  • 1 tablespoon yogurt
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • Salt to taste

    For the Curry:
  • 3 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 2 medium tomatoes, chopped
  • 1 tablespoon tomato paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 tablespoon ginger-garlic paste
  • 2 green chilies, slit lengthwise
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 large green bell pepper, cut into strips
  • 1 large red bell pepper, cut into strips
  • 1/2 cup water
  • Salt to taste
  • Fresh coriander leaves, chopped, for garnish

    Instructions:
  1. Marinate the Chicken:

    • In a bowl, mix the chicken pieces with yogurt, ginger-garlic paste, turmeric powder, red chili powder, and salt.
    • Cover and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.
  2. Prepare the Curry:

    • Heat the oil in a large pan or wok over medium heat.
    • Add cumin seeds and mustard seeds. Let them sizzle for a few seconds until fragrant.
    • Add the chopped onions and sauté until golden brown.
    • Add the ginger-garlic paste and green chilies. Sauté for another minute until the raw smell disappears.
    • Add the chopped tomatoes and tomato paste. Cook until the tomatoes are soft and the oil begins to separate from the mixture.
  3. Cook the Chicken:

    • Add the marinated chicken to the pan. Cook on high heat until the chicken is no longer pink.
    • Add ground coriander, ground cumin, garam masala, turmeric powder, and red chili powder. Mix well to coat the chicken with the spices.
  4. Add Bell Peppers:

    • Add the green and red bell peppers. Stir-fry for a few minutes until they are slightly tender but still crisp.
    • Pour in 1/2 cup of water to create a sauce. Stir well and bring to a simmer.
    • Reduce the heat and let it cook for 10-15 minutes, or until the chicken is cooked through and the flavors have melded together. Adjust salt to taste.
  5. Garnish and Serve:

    • Garnish with freshly chopped coriander leaves.
    • Serve hot with steamed rice, naan, or roti.
