Ingredients:

For Tofu Marinade:

- 1 block of firm tofu, pressed and cubed

- 1/2 cup plain yogurt (vegan yogurt for vegan version)

- 2 tablespoons lemon juice

- 1 tablespoon grated ginger

- 2 cloves garlic, minced

- 1 teaspoon ground cumin

- 1 teaspoon ground coriander

- 1/2 teaspoon turmeric

- 1/2 teaspoon paprika

- Salt to taste

For Tikka Masala Sauce:

- 2 tablespoons oil (vegetable oil or coconut oil)

- 1 onion, finely chopped

- 2 cloves garlic, minced

- 1-inch piece of ginger, grated

- 1 teaspoon ground cumin

- 1 teaspoon ground coriander

- 1 teaspoon paprika

- 1/2 teaspoon turmeric

- 1/2 teaspoon garam masala

- 1/4 teaspoon cayenne pepper (adjust to taste)

- 1 cup tomato puree

- 1 cup coconut milk

- Salt to taste

- Chopped fresh cilantro for garnish

Instructions:

1. Preheat your oven to 400°F (200°C).

2. In a mixing bowl, combine all the ingredients for the tofu marinade: yogurt, lemon juice, grated ginger, minced garlic, ground cumin, ground coriander, turmeric, paprika, and salt. Mix well.

3. Add the cubed tofu to the marinade and gently toss until the tofu is evenly coated. AllowEnglish Simpal Recipesit to marinate for at least 30 minutes, or longer if possible.

4. After marinating, arrange the tofu cubes on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes or until the tofu is lightly golden brown.

5. While the tofu is baking, prepare the tikka masala sauce. Heat oil in a large skillet over medium heat. Add chopped onions and sauté until they turn translucent.

6. Add minced garlic and grated ginger to the skillet and cook for another minute until fragrant.

7. Stir in ground cumin, ground coriander, paprika, turmeric, garam masala, and cayenne pepper. Cook for a minute to toast the spices.

8. Pour in the tomato puree and coconut milk. Stir well to combine. Season with salt to taste.

9. Let the sauce simmer for 10-15 minutes, stirring occasionally, until it thickens slightly.
