Ingredients:
- 1 cup dried chickpeas (or 2 cans of chickpeas, drained and rinsed)
- 2 medium-sized potatoes, peeled and cubed
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 2-3 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 1 green chili, chopped (adjust to taste)
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1 teaspoon garam masala
- Salt to taste
- Chopped cilantro leaves for garnishing
- Lemon wedges for serving
Instructions:
1. Preparation of Chickpeas (if using dried chickpeas):
- Soak the dried chickpeas in water overnight or for at least 6-8 hours.

- Add water and salt to the pressure cooker and cook the chickpeas until soft. It usually takes around 15-20 minutes after the pressure builds up. If you're using canned chickpeas, skip this step.
2. Cooking Aloo Chana:
- Heat oil in a large pan or pot over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Add minced garlic, grated ginger, and chopped green chili. Sauté for another couple of minutes until the raw smell disappears.
- Add chopped tomatoes and cook until they turn soft and mushy.
- Add turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix well and cook for a minute.
- Add the cubed potatoes and cooked chickpeas to the pan. Mix everything well.
- Add water as needed to adjust the consistency of the gravy. Cover and let it simmer until the potatoes are cooked through and the flavors are well blended.
- Once the potatoes are cooked, add garam masala and mix well. Adjust seasoning if needed.
- Garnish with chopped cilantro leaves.
- Serve hot with rice, roti, or naan. Optionally, serve with lemon wedges for squeezing over the dish.
