Ingredients:
- 1 cup zucchini, grated
- 1 cup corn kernels (fresh or frozen)
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1/2 cup shredded smoked cheese
- 1/4 cup melted butter
- 1/4 cup milk
- 2 eggs
- 2 tablespoons chopped fresh parsley
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- Preheat your oven to 180°C (350°F) and grease a muffin tin or line it with muffin liners.
- In a large bowl, combine the all-purpose flour, cornmeal, baking powder, salt, and black pepper.
- In a separate bowl, whisk together the melted butter, milk, and eggs until well combined.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Fold in the grated zucchini, corn kernels, shredded smoked cheese, and chopped parsley.
- Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full.
- Bake for 20-25 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
- Remove from the oven and allow the muffins to cool for a few minutes before transferring them to a wire rack to cool completely.
