Zucchini Corn and Smoked Cheese Muffins


 




Ingredients:

  • 1 cup zucchini, grated
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1/2 cup shredded smoked cheese
  • 1/4 cup melted butter
  • 1/4 cup milk
  • 2 eggs
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper




Instructions:

  • Preheat your oven to 180°C (350°F) and grease a muffin tin or line it with muffin liners.
  • In a large bowl, combine the all-purpose flour, cornmeal, baking powder, salt, and black pepper.
  • In a separate bowl, whisk together the melted butter, milk, and eggs until well combined.
  • Add the wet ingredients to the dry ingredients and stir until just combined.
  • Fold in the grated zucchini, corn kernels, shredded smoked cheese, and chopped parsley.
  • Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full.
  • Bake for 20-25 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  • Remove from the oven and allow the muffins to cool for a few minutes before transferring them to a wire rack to cool completely.
