Ingredients:
- 2 cups ivy gourd (tondalya), washed and sliced
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 medium-sized onion, finely chopped
- 2-3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 green chilies, slit lengthwise
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon coriander powder
- Salt to taste
- Fresh cilantro leaves, chopped (for garnish)
- Lemon wedges (optional, for serving)
Instructions:
1. Heat oil in a large pan or skillet over medium heat.
2. Add mustard seeds and cumin seeds. Let them splutter.
3. Add chopped onions and sauté until they turn golden brown.
4. Add minced garlic, grated ginger, and green chilies. Sauté for another minute.
5. Add the sliced ivy gourd to the pan and mix well with the onions and spices.
6. Sprinkle turmeric powder, red chili powder, coriander powder, and salt. Mix everything together, ensuring the ivy gourd is well coated with the spices.
7. Cover the pan with a lid and cook for about 8-10 minutes, stirring occasionally. The ivy gourd should become tender and slightly caramelized.
8. Once the ivy gourd is cooked, remove the lid and cook for an additional 2-3 minutes to allow any excess moisture to evaporate.
