Ingredients:

- 2 large sweet potatoes, peeled and diced

- 1 tablespoon olive oil

- 1 small onion, diced

- 2 cloves garlic, minced

- 1 red bell pepper, diced

- 1 green bell pepper, diced

- 1 cup corn kernels (fresh or frozen)

- 1 cup black beans, drained and rinsed

- 1 teaspoon ground cumin

- 1 teaspoon chili powder

- Salt and pepper to taste

- 1 cup shredded cheddar cheese

- Fresh cilantro, chopped (for garnish)

Instructions:

1. Preheat your oven to 375°F (190°C).

2. Place the diced sweet potatoes in a pot of boiling water and cook for about 5-7 minutes, or until slightly tender. Drain and set aside.

3. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until the onion becomes translucent.

4. Add the red and green bell peppers to the skillet and cook for another 3-4 minutes, until they start to soften.

5. Stir in the corn, black beans, cumin, chili powder, salt, and pepper. Cook for an additional 2 minutes.

6. Add the cooked sweet potatoes to the skillet and mix everything together until well combined.

7. Transfer the mixture to a baking dish and spread it out evenly.

8. Sprinkle the shredded cheddar cheese over the top of the sweet potato mixture.

9. Place the baking dish in the preheated oven and bake for about 15-20 minutes, or until the cheese is melted and bubbly.

10. Remove from the oven and let it cool for a few minutes.

11. Garnish with fresh cilantro and serve hot.
