- 2 cups sorghum flour

- 1 cup tapioca flour

- 2 teaspoons active dry yeast

- 2 tablespoons olive oil

- 1 1/2 cups warm water

Instructions:

1. In a large mixing bowl, combine the sorghum flour, tapioca flour, rice flour, ground flaxseed, yeast, and salt. Mix well.

2. In a separate small bowl, combine the honey or maple syrup, olive oil, and warm water. Stir to dissolve the sweetener.

3. Add the wet ingredients to the dry ingredients and stir until well combined. The dough will be sticky.

4. Transfer the dough to a greased loaf pan, smoothing the top with a spatula or wet hands. Cover the pan with a clean kitchen towel and let it rise in a warm place for about 1 hour, or until the dough has doubled in size.

5. Preheat your oven to 375°F (190°C).

6. Once the dough has risen, place the loaf pan in the preheated oven and bake for 40-45 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.

7. Remove the bread from the oven and let it cool in the pan for a few minutes. Then, transfer it to a wire rack to cool completely before slicing.
