Ingredients:
- 1 cup sago pearls (sabudana)
- 1 medium-sized boiled potato
- 2 green chilies, finely chopped
- 1/4 cup roasted peanuts, coarsely ground
- 2 tablespoons fresh coriander leaves, chopped
- 1/2 teaspoon cumin seeds
- Salt to taste
- Oil for cooking
Instructions:
1. Rinse the sago pearls (sabudana) in water 2-3 times, then soak them in water for 3-4 hours. After soaking, drain the water completely and keep aside.
2. In a mixing bowl, grate the boiled potato. Add the soaked sago pearls, chopped green chilies, roasted peanuts, chopped coriander leaves, cumin seeds, and salt. Mix everything well to form a dough-like mixture. If the mixture is too dry, you can add a little water to bind it together.
3. Divide the mixture into equal-sized portions. Take a portion and flatten it on your palm to form a round pancake-like shape, about 4-5 inches in diameter. You can also use a plastic sheet or a banana leaf to flatten the thalipeeth.
4. Heat a non-stick skillet or tawa over medium heat. Drizzle some oil on the skillet and place the flattened thalipeeth on it. Cook it on medium-low heat until it turns golden brown on one side. Drizzle a little oil on the top side and flip it carefully using a spatula.
5. Cook the other side until it becomes golden brown as well. Make sure the thalipeeth is cooked well and crisp on both sides.
6. Remove the cooked thalipeeth from the skillet and place it on a serving plate. Repeat the process with the remaining portions of the dough.
7. Serve the Sago Thalipeeth hot with yogurt, chutney, or any side dish of your choice.
