Ingredients:
- Potatoes - 2 medium-sized, boiled and mashed
- Onion - 1 medium-sized, finely chopped
- Tomatoes - 2 medium-sized, finely chopped
- Green chilies - 2, finely chopped
- Ginger paste - 1 teaspoon
- Garlic paste - 1 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Garam masala powder - 1/2 teaspoon
- Oil - 2 tablespoons
- Salt - to taste
- Fresh coriander leaves - for garnishing
Instructions:
- Heat oil in a pan and add ginger paste, garlic paste, and green chilies. Saute until fragrant.
- Add finely chopped onions to the pan and sauté until they turn golden brown.
- Now, add the chopped tomatoes, coriander powder, cumin powder, turmeric powder, red chili powder, and garam masala powder. Mix well and cook the spices until the oil separates.
- Add the mashed potatoes to the pan and mix well with the spices. Cook for a few minutes on low heat, allowing the potatoes to absorb the flavors of the spices.
- Season with salt according to taste and turn off the heat.
- Garnish the Potato Masala with fresh coriander leaves.
