Ingredients:
- 2 cups litchi pulp (fresh or canned)
- 1 cup heavy cream
- 1 cup milk
- 1/2 cup sugar (adjust according to taste)
- Litchi pieces for garnish (optional)
- Litchi syrup for drizzling (optional)
- In a blender, combine litchi pulp, heavy cream, milk, and sugar. Blend until smooth and well combined.
- Pour the litchi ice cream mixture into a shallow and wide container or baking dish. Make sure the mixture is evenly spread and about 1/4 to 1/2 inch thick.
- Place the container in the freezer and let it chill for about 2 hours or until the edges start to freeze.
- Take the container out of the freezer and use a spatula to scrape the partially frozen edges towards the center, creating rolls of ice cream. Continue scraping until you have rolled up all the ice cream.
- Place the rolls back into the freezer for another hour or until completely frozen.
- Once the ice cream rolls are frozen, carefully transfer them to serving bowls or plates.
- Garnish with litchi pieces and drizzle litchi syrup on top for added flavor and presentation.
- Serve immediately and enjoy the refreshing Litchi Ice Cream Rolls!
