Ghavane recipe for fasting

Ghavane, also known as Neer Dosa, is a popular South Indian crepe made from rice flour. It is often consumed during fasting periods or as a light meal. Here's a simple recipe for making Ghavane for fasting:

Ingredients:

- 1 cup rice flour

- Water, as needed

- Rock salt or sendha namak, to taste

- Oil, for greasing the pan

Instructions:

1. In a large mixing bowl, take 1 cup of rice flour. Make sure the rice flour is finely ground and smooth.

2. Gradually add water to the rice flour, while whisking continuously. Keep adding water until you achieve a thin, pouring consistency batter. The batter should be smooth without any lumps.

3. Add rock salt or sendha namak to the batter and mix well. Adjust the salt according to your taste preference.

4. Heat a non-stick or cast-iron dosa tawa (pan) on medium heat. Once the tawa is hot, drizzle a few drops of oil and spread it evenly using a kitchen towel or a piece of cloth. This helps in greasing the pan and prevents the dosa from sticking.

5. Take a ladleful of the batter and pour it in the center of the tawa. Quickly spread the batter in a circular motion to form a thin dosa. Ghavane should be thin and lacey in texture.

6. Drizzle a teaspoon of oil around the edges of the dosa and on top. Cook the dosa on medium heat until the edges start to turn golden brown and crispy.

7. Gently flip the dosa using a spatula and cook the other side for a minute or so. The dosa should be cooked through and slightly crispy.

8. Remove the Ghavane from the tawa and transfer it to a plate. Repeat the process with the remaining batter to make more dosas.

9. Serve the Ghavane hot with your choice of accompaniment such as coconut chutney, tomato chutney, or any fasting-approved side dish.

Note: Ghavane is traditionally made with rice flour, but you can also add a small amount of grated coconut to the batter for added flavor. Additionally, you can garnish the dosa with finely chopped coriander leaves or green chilies for a spicy kick.

Remember to adjust the quantities according to your serving size requirements. Enjoy your Ghavane during fasting or as a light and delicious meal!
