Corn - Carrot Soup


 





Ingredients:

  • 1 cup corn kernels (fresh or frozen)
  • 1 cup carrots (chopped)
  • 1 onion (finely chopped)
  • 2-3 garlic cloves (for garnishing)
  • 4 cups vegetable stock or water
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 1 tablespoon fresh coriander (finely chopped, for garnishing)
  • 1 tablespoon fresh mint (finely chopped, for garnishing)
  • 1 tablespoon ghee or oil


Procedure:

  • Heat ghee or oil in a pan and add the chopped onion. Sauté the onion until it becomes soft and golden brown.
  • Now, add the chopped carrots and sauté them together for 2-3 minutes.
  • Add the corn kernels and turmeric powder and cook the mixture for another 2-3 minutes.
  • Now, pour the vegetable stock or water into the pan, along with red chili powder and salt. Bring the mixture to a boil.
  • Simmer the soup on medium heat until the carrots and corn are cooked and the soup has slightly thickened.
  • Transfer the hot soup into serving bowls and garnish it with fresh coriander and mint leaves.
  • Serve the hot soup and enjoy it with your family and friends.
