Ingredients:
- 1 cup corn kernels (fresh or frozen)
- 1 cup carrots (chopped)
- 1 onion (finely chopped)
- 2-3 garlic cloves (for garnishing)
- 4 cups vegetable stock or water
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- Salt to taste
- 1 tablespoon fresh coriander (finely chopped, for garnishing)

- 1 tablespoon ghee or oil
Procedure:
- Heat ghee or oil in a pan and add the chopped onion. Sauté the onion until it becomes soft and golden brown.
- Now, add the chopped carrots and sauté them together for 2-3 minutes.
- Add the corn kernels and turmeric powder and cook the mixture for another 2-3 minutes.
- Now, pour the vegetable stock or water into the pan, along with red chili powder and salt. Bring the mixture to a boil.
- Simmer the soup on medium heat until the carrots and corn are cooked and the soup has slightly thickened.
- Transfer the hot soup into serving bowls and garnish it with fresh coriander and mint leaves.
