Cauliflower Pakoda Recipe




Sure! Here's a recipe for cauliflower pakodas, a popular Indian snack:

Ingredients:

- 1 medium-sized cauliflower, cut into florets

- 1 cup gram flour (besan)

- 2 tablespoons rice flour

- 1 teaspoon red chili powder

- 1/2 teaspoon turmeric powder

- 1 teaspoon coriander powder

- 1/2 teaspoon cumin powder

- 1/2 teaspoon garam masala

- 1/2 teaspoon chaat masala (optional)

- Salt to taste

- Water (as needed)

- Oil for deep frying

- Fresh coriander leaves, chopped (for garnish)

- Lemon wedges (for serving)

Instructions:

1. In a large bowl, combine gram flour, rice flour, red chili powder, turmeric powder, coriander powder, cumin powder, garam masala, chaat masala (if using), and salt. Mix well to combine all the dry ingredients.

2. Gradually add water to the dry mixture while whisking continuously to make a thick batter. The batter should be thick enough to coat the cauliflower florets. Make sure there are no lumps in the batter. Set the batter aside for 10-15 minutes.

3. Heat oil in a deep pan or kadai over medium heat for deep frying.

4. Dip each cauliflower floret into the batter, making sure it's coated evenly. Shake off any excess batter and carefully drop it into the hot oil.

5. Fry the cauliflower pakodas in batches, without overcrowding the pan. Cook them until they turn golden brown and crispy. Remove them from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

6. Repeat the process with the remaining cauliflower florets until all the pakodas are fried.

7. Garnish the cauliflower pakodas with freshly chopped coriander leaves.

8. Serve the pakodas hot with green chutney, tamarind chutney, or ketchup, along with lemon wedges on the side.
