Here's a recipe for Cauliflower Cheese Kofta Curry:
Ingredients for Cauliflower Koftas:
- 1 medium-sized cauliflower, cut into florets
- 1 cup grated cheese (cheddar or mozzarella)
- 1/2 cup bread crumbs
- 1/4 cup finely chopped onions
- 2 tablespoons finely chopped cilantro (coriander)
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon red chili powder
- Salt to taste
- Oil for frying
Ingredients for Curry:
- 2 tablespoons oil
- 1 medium-sized onion, finely chopped
- 2 tomatoes, pureed
- 2 teaspoons ginger-garlic paste
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon garam masala
- 1 cup heavy cream
- Salt to taste
- Fresh cilantro (coriander) leaves for garnishing
Instructions:
1. In a large pot, boil water with salt. Add the cauliflower florets and blanch them for about 5 minutes until they become slightly tender. Drain the water and let the cauliflower cool.
2. In a mixing bowl, add the cooled cauliflower florets, grated cheese, bread crumbs, chopped onions, cilantro, ginger-garlic paste, cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Mix well to form a dough-like mixture.
3. Take small portions of the mixture and shape them into small round kofta balls. Set aside.
4. Heat oil in a deep pan or kadai over medium heat. Once the oil is hot, carefully add the cauliflower koftas and fry them until golden brown and crispy. Remove the koftas from the oil and place them on a paper towel to drain excess oil. Set aside.
5. In a separate pan, heat oil and add the chopped onions. Sauté the onions until they become translucent.
6. Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
7. Add the tomato puree and cook for a few minutes until the oil starts to separate from the mixture.
8. Add cumin powder, coriander powder, turmeric powder, red chili powder, garam masala, and salt. Mix well and cook for a couple of minutes to blend the spices.
9. Reduce the heat to low and add the heavy cream. Stir well and let the curry simmer for a few minutes until it thickens slightly.
10. Gently add the fried cauliflower koftas to the curry and simmer for another 5 minutes, allowing the koftas to absorb the flavors.
11. Garnish with fresh cilantro leaves.
