- 4 cups milk

- 1 tablespoon ghee (clarified butter)

- 1/4 teaspoon saffron strands (optional)

- A pinch of salt

Instructions:

1. Rinse the cracked wheat under running water to remove any impurities. Drain well and set aside.

2. Heat the ghee in a deep saucepan or pot over medium heat. Add the cracked wheat and sauté for about 2-3 minutes until it becomes fragrant and lightly toasted.

3. Pour in the milk and bring it to a boil. Reduce the heat to low and simmer, stirring occasionally to prevent sticking, for about 20-25 minutes or until the cracked wheat is cooked and soft.

4. Add the sugar, cardamom powder, and a pinch of salt. Stir well to combine and continue cooking for another 5-7 minutes until the pudding thickens slightly.

5. In a separate small bowl, soak the saffron strands in a tablespoon of warm milk for a few minutes to release their color and aroma. Then add the saffron milk to the pudding and mix well. This step is optional, but it adds a beautiful golden hue to the pudding.
