Walnut Date Cake Recipe

Ingredients:

- 1 1/2 cups pitted dates, chopped

- 1 1/2 cups boiling water

- 1 teaspoon baking soda

- 1/2 cup unsalted butter, softened

- 1 cup granulated sugar

- 2 large eggs

- 1 teaspoon vanilla extract

- 2 cups all-purpose flour

- 1/2 teaspoon salt

- 1 cup chopped walnuts

For the syrup:

- 1/2 cup water

- 1/2 cup granulated sugar

- 1 teaspoon lemon juice

Instructions:

1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

2. In a medium-sized bowl, combine the chopped dates and baking soda. Pour the boiling water over the dates and let them sit for about 10 minutes to soften.

3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

4. In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the butter mixture, alternating with the date mixture. Start and end with the dry ingredients. Mix until just combined. Fold in the chopped walnuts.

5. Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.

6. While the cake is baking, prepare the syrup. In a small saucepan, combine the water, sugar, and lemon juice. Bring to a boil over medium heat, stirring until the sugar is completely dissolved. Remove from heat and set aside to cool.

7. Once the cake is done, remove it from the oven and let it cool in the pan for 10 minutes. Use a toothpick or skewer to poke holes all over the top of the cake. Slowly pour the syrup over the cake, allowing it to soak in.

8. Let the cake cool completely in the pan before removing it. Once cooled, transfer the cake to a serving plate and enjoy!
