Soyabean Rice With Vegetables

Soybean Rice with Vegetables is a nutritious and flavorful dish that combines the protein-rich goodness of soybeans with aromatic rice and a variety of colorful vegetables. Here's a simple recipe to guide you in making this delicious meal:

Ingredients:

  • 1 cup soybeans, soaked overnight and cooked
  • 2 cups cooked rice (white or brown)
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 bell pepper (any color), diced
  • 1 carrot, diced
  • 1 cup broccoli florets
  • 1 cup sliced mushrooms
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • Salt and pepper to taste
  • Fresh cilantro or green onions for garnish

Instructions:

  • Start by cooking the soybeans. Drain and rinse the soaked soybeans, then place them in a pot and cover with water. Bring to a boil, reduce the heat, and let simmer for about 1 hour or until tender. Drain and set aside.
  • In a large pan or wok, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become fragrant and slightly golden.
  • Add the diced bell pepper, carrot, broccoli florets, and mushrooms to the pan. Stir-fry the vegetables for about 5-7 minutes or until they are cooked but still crisp.
  • Add the cooked soybeans to the pan and stir to combine with the vegetables.
  • Add the cooked rice to the pan, breaking up any clumps with a spatula. Mix the rice with the vegetables and soybeans, ensuring they are well combined.
  • Drizzle soy sauce and oyster sauce (if using) over the rice and vegetables. Season with salt and pepper to taste. Stir everything together until the sauces are evenly distributed.
  • Cook the mixture for an additional 3-4 minutes, stirring occasionally, to allow the flavors to meld.
  • Once the dish is cooked, remove it from the heat and garnish with fresh cilantro or green onions.

Your Soybean Rice with Vegetables is now ready to be served. This versatile dish can be enjoyed as a main course or as a side dish with other meals. It's a great way to incorporate protein and vegetables into your diet. Enjoy!
