Sooji Kurdia Recipe



Sure! Here's a recipe for Sooji Kheer, also known as Semolina Pudding, a popular Indian dessert:

Ingredients:

- 1/2 cup sooji (semolina)

- 4 cups milk

- 1/2 cup sugar (adjust according to taste)

- 2 tablespoons ghee (clarified butter)

- 1/4 cup mixed dry fruits (such as almonds, cashews, raisins), chopped

- 1/2 teaspoon cardamom powder

- A pinch of saffron strands (optional)

- 1 tablespoon chopped pistachios (for garnish)

Instructions:

1. Heat ghee in a heavy-bottomed pan or a deep saucepan over medium heat.

2. Add the sooji (semolina) and roast it until it turns golden brown, stirring continuously to prevent burning. This should take around 5-6 minutes.

3. In a separate saucepan, heat the milk. Once it starts simmering, reduce the heat to low.

4. Slowly add the roasted sooji to the simmering milk, stirring continuously to avoid any lumps from forming.

5. Cook the mixture on low heat for about 10-12 minutes, until the sooji is cooked and the kheer thickens.

6. Add sugar, cardamom powder, saffron strands (if using), and mix well. Continue to simmer for another 2-3 minutes.

7. In a small pan, heat a teaspoon of ghee and add the chopped dry fruits. Sauté them until they turn slightly golden.

8. Add the sautéed dry fruits to the kheer and mix well.

9. Remove the kheer from heat and allow it to cool for a few minutes.

10. Serve the sooji kheer warm or chilled, garnished with chopped pistachios on top.
