Sindhi Besan Curry Recipe

Ingredients:

- 1 cup besan (gram flour)

- 2 tablespoons oil

- 1 teaspoon cumin seeds

- 1 onion, finely chopped

- 2 tomatoes, finely chopped

- 2 green chilies, slit

- 1 teaspoon ginger-garlic paste

- 1/2 teaspoon turmeric powder

- 1 teaspoon red chili powder

- 1 teaspoon coriander powder

- 1/2 teaspoon garam masala

- Salt to taste

- Fresh coriander leaves, chopped (for garnishing)

- Water

Instructions:

1. Heat oil in a pan or kadhai over medium heat. Add cumin seeds and let them splutter.

2. Add the finely chopped onions and green chilies to the pan. Sauté until the onions turn golden brown.

3. Add ginger-garlic paste and sauté for a minute until the raw smell goes away.

4. Reduce the heat to low and add besan (gram flour) to the pan. Stir continuously to avoid lumps and roast the besan until it turns golden brown. This process will take around 8-10 minutes. Be patient and keep stirring to prevent burning.

5. Once the besan is roasted, add the chopped tomatoes to the pan. Cook for a few minutes until the tomatoes soften.

6. Add turmeric powder, red chili powder, coriander powder, and salt to taste. Mix well to combine all the ingredients.

7. Slowly add water to the pan while stirring continuously to make a smooth and lump-free gravy. The consistency should be neither too thick nor too thin. Adjust the amount of water according to your preference.

8. Increase the heat to medium and bring the curry to a boil. Stir occasionally to prevent sticking.

9. Once the curry comes to a boil, reduce the heat to low and let it simmer for about 5 minutes. This will allow the flavors to blend together.

10. Sprinkle garam masala over the curry and mix well. Cook for an additional 2 minutes.

11. Remove the Sindhi Besan Curry from heat. Garnish with freshly chopped coriander leaves.

12. Serve hot with steamed rice or roti (Indian bread).
