Sure! Here's a simple recipe for Saunf Sharbat, a refreshing Indian drink made with fennel seeds (saunf):
Ingredients:
- 1/4 cup fennel seeds (saunf)
- 4 cups water
- 1/2 cup sugar (adjust to taste)
- Juice of 1 lemon
- Ice cubes
- Fresh mint leaves (for garnish)
Instructions:
1. In a pan, dry roast the fennel seeds (saunf) on medium heat until they become aromatic and slightly golden. Stir them continuously to prevent burning. This process helps to enhance the flavor of the fennel seeds.
2. Remove the roasted fennel seeds from the pan and let them cool for a few minutes. Once cooled, grind them to a coarse powder using a mortar and pestle or a spice grinder.
3. In a saucepan, bring the water to a boil. Add the ground fennel seeds to the boiling water and reduce the heat to low. Let it simmer for about 10-15 minutes, allowing the flavors to infuse into the water.
4. After 15 minutes, turn off the heat and let the fennel-infused water cool down to room temperature.
5. Once the water has cooled, strain it through a fine-mesh sieve to remove the fennel seeds.
6. Add sugar to the fennel-infused water and stir until the sugar completely dissolves. You can adjust the amount of sugar according to your taste preferences.
7. Squeeze the juice of one lemon into the sharbat and mix well.
8. Transfer the saunf sharbat to a serving jug or individual glasses filled with ice cubes.
9. Garnish with fresh mint leaves.
10. Serve the Saunf Sharbat chilled and enjoy its refreshing flavor!
Note: You can also add a pinch of black salt or chaat masala for a tangy twist, if desired.
