Sure! Here's a recipe for Sabudana Papad, a crispy Indian snack made from tapioca pearls (sabudana):
Ingredients:
- 1 cup sabudana (tapioca pearls)
- 1 tablespoon cumin seeds
- 1 tablespoon black pepper powder
- Salt to taste
- Water (as needed)
- Oil (for deep frying)
Instructions:
1. Rinse the sabudana under running water until the water runs clear. Then soak the sabudana in water for about 4-5 hours or until they become soft. Drain the water completely.
2. Take the soaked sabudana in a large mixing bowl. Add cumin seeds, black pepper powder, and salt to taste. Mix well to combine all the ingredients.
3. Gradually add water, a little at a time, while mixing continuously to form a smooth and thick batter. The batter should be thick enough to spread but not too thin.
4. Heat oil in a deep frying pan or kadai over medium heat.
5. Take a clean plastic sheet or a plastic cover and spread a few drops of oil on it. This will prevent the batter from sticking.
6. Take a small portion of the batter and spread it evenly in a circular shape on the oiled plastic sheet. Make sure the papad is thin and even.
7. Carefully transfer the spread batter from the plastic sheet to the hot oil. Be cautious as it may splatter. Fry on medium heat until it turns crispy and golden brown.
8. Once done, remove the papad from the oil using a slotted spoon and drain excess oil on a kitchen paper towel.
9. Repeat the process with the remaining batter to make more papads.
10. Allow the papads to cool completely before storing them in an airtight container.
Sabudana papads are ready to be served as a crispy snack with tea or as an accompaniment to your meals. Enjoy!
Note: Make sure the sabudana is soaked well and the batter is of the right consistency to get crispy and perfect papads.
