Rice Pudding

Ingredients:

  • 1 cup short-grain white rice
  • 2 cups water
  • 1/2 teaspoon salt
  • 4 cups whole milk
  • 1/2 cup sugar
  • 1 cinnamon stick
  • 2 teaspoons vanilla extract
  • 1/2 cup raisins (optional)
  • Ground cinnamon, for garnish (optional)


Instructions:

  1. Rinse the rice thoroughly in cold water and drain.

  2. In a medium-sized saucepan, combine the rice, water, and salt. Bring to a boil over high heat, then reduce the heat to low and cover the pan. Cook for about 15 minutes, or until the water has been absorbed and the rice is tender.

  3. Add the milk, sugar, and cinnamon stick to the pan with the rice. Stir well to combine.

  4. Bring the mixture to a simmer over medium-low heat, stirring frequently. Continue to cook for about 25-30 minutes, or until the pudding has thickened and the rice is very soft.

  5. Remove the pan from the heat and stir in the vanilla extract and raisins (if using).

  6. Serve the rice pudding warm or chilled, garnished with ground cinnamon if desired.
