Instructions:

  1. Peel the raw papaya and cut it in half lengthwise. Scoop out the seeds using a spoon. Grate the papaya using a grater or shred it into thin strips using a knife.
  2. Heat the vegetable oil in a pan or skillet over medium heat.
  3. Add mustard seeds and cumin seeds to the hot oil and let them splutter.
  4. Add the chopped onions and green chilies to the pan. Sauté until the onions become translucent and slightly golden brown.
  5. Add the grated or shredded raw papaya to the pan and mix well with the onions.
  6. Sprinkle turmeric powder, red chili powder, coriander powder, and salt over the papaya. Stir gently to evenly distribute the spices.
  7. Reduce the heat to low, cover the pan, and let the papaya cook for about 10 to 15 minutes, stirring occasionally to prevent sticking. The papaya should become tender but still retain some crunch.
  8. Once the papaya is cooked to your desired texture, remove the pan from heat.
  9. Garnish with fresh coriander leaves if desired.
