Rava-Khobra Vadi Recipe




Rava-Khobra Vadi is a delicious Indian snack made with semolina (rava), coconut (khobra), and spices. It is typically deep-fried until crispy and served with chutney or as a side dish. Here's a recipe to prepare Rava-Khobra Vadi:

Ingredients:

- 1 cup semolina (rava)

- 1 cup grated coconut

- 1/2 cup yogurt

- 2 tablespoons rice flour

- 2 green chilies, finely chopped

- 1/4 cup cilantro leaves, finely chopped

- 1/2 teaspoon ginger paste

- 1/2 teaspoon cumin seeds

- Salt to taste

- Oil for frying

Instructions:

1. In a large mixing bowl, combine semolina, grated coconut, yogurt, rice flour, green chilies, cilantro leaves, ginger paste, cumin seeds, and salt. Mix well to form a thick batter. Allow the batter to rest for about 15-20 minutes.

2. After the resting period, check the consistency of the batter. It should be thick enough to hold its shape. If it is too thick, add a little water to adjust the consistency.

3. Heat oil in a deep pan or kadai for frying.

4. Take a small portion of the batter and shape it into a round or oval vadi using your hands. Alternatively, you can also spread the batter on a greased plate and cut it into diamond shapes.

5. Carefully drop the shaped vadi into the hot oil and fry on medium heat until they turn golden brown and crispy. Fry a few vadis at a time, depending on the size of your pan, to ensure they cook evenly.

6. Once the vadis are fried, remove them from the oil using a slotted spoon and drain excess oil on a paper towel.

7. Repeat the process with the remaining batter until all the vadis are fried.

8. Serve the Rava-Khobra Vadis hot with your favorite chutney or sauce.
