Ras Dhokla is a popular Gujarati snack made from fermented batter. It is a soft and spongy steamed dish that is typically served with a flavorful tempering (tadka) on top. Here is the recipe for Ras Dhokla:
Ingredients:
- 1 cup gram flour (besan)
- 1/4 cup semolina (sooji)
- 1/4 cup yogurt (curd)
- 1 teaspoon ginger-green chili paste
- 1 teaspoon lemon juice
- 1 teaspoon fruit salt (eno)
- Salt to taste
- Water, as needed
- For Tempering (Tadka):
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon sesame seeds
- 1 teaspoon sugar
- 1 teaspoon lemon juice
- A pinch of asafoetida (hing)
- Few curry leaves
- Fresh coriander leaves, chopped
- Grated coconut (optional)
Instructions:
- In a mixing bowl, combine gram flour, semolina, yogurt, ginger-green chili paste, lemon juice, and salt. Mix well to form a smooth batter. Add water gradually to make a thick yet flowing consistency batter.
- Set the batter aside for fermentation for about 20-30 minutes. The batter should rise and become light and fluffy.
- Grease a steamer plate or thali with oil. In a separate bowl, mix fruit salt with 1 tablespoon of water. Add this mixture to the fermented batter and mix gently. The batter will become frothy.
- Pour the batter into the greased plate or thali and steam for 12-15 minutes or until a toothpick inserted in the center comes out clean.
- Once the dhokla is steamed, remove it from the steamer and let it cool for a few minutes. Cut it into square or diamond-shaped pieces.
- For the tempering, heat oil in a small pan. Add mustard seeds and let them splutter. Then add sesame seeds, asafoetida, and curry leaves. Stir for a few seconds.
- Turn off the heat and add sugar and lemon juice to the tempering. Mix well.
- Pour this tempering mixture evenly over the prepared dhokla pieces.
- Garnish with chopped coriander leaves and grated coconut (if desired).
- Allow the dhokla to soak in the tempering for a few minutes.
