Pumpkin Cake Recipe

Ingredients:

- 2 cups all-purpose flour

- 1 1/2 cups granulated sugar

- 1/2 cup brown sugar

- 1 teaspoon baking powder

- 1/2 teaspoon baking soda

- 1/2 teaspoon salt

- 1 teaspoon ground cinnamon

- 1/2 teaspoon ground nutmeg

- 1/4 teaspoon ground cloves

- 1/4 teaspoon ground ginger

- 1/2 cup unsalted butter, softened

- 1 cup pumpkin puree

- 3 large eggs

- 1 teaspoon vanilla extract

- 1/2 cup milk

Cream Cheese Frosting:

- 8 ounces cream cheese, softened

- 1/2 cup unsalted butter, softened

- 4 cups powdered sugar

- 1 teaspoon vanilla extract

Optional garnish:

- Crushed walnuts or pecans

Instructions:

1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or line it with parchment paper.

2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger. Set aside.

3. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This can be done with an electric mixer or by hand with a wooden spoon.

4. Add the pumpkin puree to the butter and sugar mixture, and mix well. Then, add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients, mixing just until combined after each addition. Be careful not to overmix.

6. Pour the batter into the prepared baking pan, spreading it evenly.

7. Bake for approximately 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

8. While the cake is baking, prepare the cream cheese frosting. In a mixing bowl, beat the softened cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract, and continue beating until the frosting is creamy and well combined.

9. Once the cake has cooled completely, spread the cream cheese frosting evenly over the top.

10. If desired, sprinkle crushed walnuts or pecans on top of the frosting for garnish.

Note: You can also bake this cake in two 9-inch round pans for a layered cake. Adjust the baking time accordingly, checking for doneness with a toothpick.
