Pohya Ladoo Recipe



Sure! Here's a recipe for Poha Ladoo:

Ingredients:

- 2 cups poha (flattened rice)

- 1 cup powdered jaggery or sugar

- 1/2 cup grated coconut (fresh or desiccated)

- 1/4 cup ghee (clarified butter)

- 1/4 cup chopped nuts (cashews, almonds, pistachios, etc.)

- 1/2 teaspoon cardamom powder

- A pinch of saffron strands (optional)

- Raisins for garnish (optional)

Instructions:

1. Dry roast the poha in a pan on low heat until it turns crisp. Make sure not to burn it. Remove from heat and let it cool.

2. Grind the roasted poha in a mixer or food processor to a coarse powder. Set it aside.

3. Heat ghee in a pan over medium heat. Add the chopped nuts and sauté until they turn golden brown. Remove from heat and set aside.

4. In the same pan, add the grated coconut and roast it for a couple of minutes until it turns light brown and releases its aroma. Remove from heat and let it cool.

5. In a mixing bowl, combine the powdered poha, roasted nuts, roasted coconut, powdered jaggery or sugar, cardamom powder, and saffron strands (if using). Mix everything well.

6. Melt the remaining ghee and add it gradually to the mixture. Mix well until the mixture comes together and you can shape it into ladoos.

7. Take a small portion of the mixture and shape it into a ball by gently pressing and rolling it between your palms. Repeat with the remaining mixture to make ladoos.

8. Garnish each ladoo with a raisin, if desired.

9. Let the ladoos cool completely and then store them in an airtight container.
