- 8 ounces cream cheese, softened

- 1/2 cup unsalted butter, softened

- 4 cups powdered sugar

- 1 teaspoon vanilla extract

Optional garnish:

- Additional crushed pineapple

- Maraschino cherries

Instructions:

1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

4. Gradually add the dry ingredients to the butter mixture, alternating with the crushed pineapple and buttermilk. Begin and end with the dry ingredients, mixing just until combined after each addition. Be careful not to overmix.

5. Divide the batter equally between the prepared cake pans and smooth the tops with a spatula. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

6. While the cakes are baking, prepare the pineapple filling. In a small saucepan, combine the drained crushed pineapple, granulated sugar, and cornstarch. Cook over medium heat, stirring constantly, until the mixture has thickened. Remove from heat and let it cool.

9. Place one cake layer on a serving plate. Spread the pineapple filling evenly over the top. Place the second cake layer on top.
