Paneer Rasmalai Recipe


 


Paneer Rasmalai is a delicious and popular Indian sweet dish. It is made with paneer (Indian cottage cheese) dumplings cooked in a rich, creamy milk syrup. Here's a recipe to make Paneer Rasmalai:

Ingredients:

For Paneer Dumplings:

- 1 liter full-fat milk

- 2 tablespoons lemon juice or vinegar

- 1 cup water

- 1 cup sugar

- 4 cups water (for syrup)

- A pinch of saffron strands

- 1/2 teaspoon cardamom powder

- Chopped almonds and pistachios for garnishing

For Milk Syrup:

- 1 liter full-fat milk

- 1 cup sugar

- 1/2 teaspoon cardamom powder

- A pinch of saffron strands

- Chopped almonds and pistachios for garnishing

Instructions:

1. Making Paneer Dumplings:

   - In a large pot, heat the milk over medium heat and bring it to a boil.

   - Once the milk starts boiling, reduce the heat and add lemon juice or vinegar gradually while stirring continuously. This will help curdle the milk.

   - As the milk curdles completely and the whey separates, turn off the heat. If required, add more lemon juice or vinegar until the milk completely curdles.

   - Place a muslin cloth or cheesecloth over a strainer and pour the curdled milk into it to separate the whey. Rinse the paneer under running water to remove any traces of lemon juice or vinegar.

   - Gather the edges of the cloth and squeeze out any excess water. Hang the cloth with the paneer for about 30 minutes to remove any remaining whey.

   - After 30 minutes, place the paneer on a flat surface and knead it well until it becomes smooth and pliable.

   - Divide the paneer into small equal-sized portions and roll them into smooth balls. Flatten the balls slightly to give them a disc-like shape.

2. Preparing the Sugar Syrup:

   - In a wide pan, add 4 cups of water and 1 cup of sugar. Bring it to a boil.

   - Once the sugar dissolves completely, carefully drop the paneer dumplings into the boiling syrup.

   - Cover the pan and let the dumplings cook for about 12-15 minutes on medium heat. The dumplings will become soft and spongy.

   - After 15 minutes, turn off the heat and let the dumplings cool in the syrup for a few minutes.

3. Preparing the Milk Syrup:

   - In a separate pan, heat the milk over medium heat and bring it to a boil.

   - Reduce the heat and simmer the milk, stirring occasionally, until it reduces to about half its original quantity.

   - Add sugar, cardamom powder, and saffron strands to the milk. Mix well and cook for another 5 minutes.

   - Turn off the heat and let the milk syrup cool to room temperature.

4. Assembling the Rasmalai:

   - Gently remove the paneer dumplings from the sugar syrup and squeeze out any excess syrup.

   - Place the dumplings into the prepared milk syrup and refrigerate for at least 2-3 hours to allow them to soak up the flavors.

   - Garnish the Rasmalai with chopped almonds and pistachios.
