Ingredients:

  • 1 pound fresh okra

  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust according to your spice preference)

Instructions:

  1. Wash the okra under running water and pat them dry using a kitchen towel. Trim off the tops and bottoms of the okra, and then cut them into 1-inch pieces.
  2. Heat the vegetable oil in a large pan or skillet over medium heat.
  3. Add the chopped onions to the pan and sauté until they become translucent and slightly golden brown.
  4. Add the minced garlic and cook for another minute until the garlic becomes fragrant.
  5. Add the okra pieces to the pan and stir well to coat them with the onion and garlic mixture.
  6. Sprinkle cumin powder, coriander powder, turmeric powder, red chili powder, and salt over the okra. Stir gently to evenly distribute the spices.
  7. Reduce the heat to low, cover the pan, and let the okra cook for about 15 to 20 minutes, stirring occasionally to prevent sticking. The okra should become tender but still retain some crunch.
  8. Once the okra is cooked to your desired texture, remove the pan from heat.
  9. Garnish with fresh cilantro leaves if desired.
  10. Serve the okra vegetable hot with steamed rice or Indian bread (such as roti or naan). You can also squeeze some lemon juice over the dish for an extra tangy flavor.
