Ingredients:

- 1 cup vermicelli (sevaya)

- 4 cups milk

- 1 cup mango puree (fresh or canned)

- 1/2 cup sugar (adjust according to taste)

- 1/4 teaspoon cardamom powder

- A pinch of saffron strands (optional)

- 2 tablespoons chopped almonds and pistachios

- 1 tablespoon ghee (clarified butter)

Instructions:

1. Heat the ghee in a deep pan or pot over medium heat. Add the vermicelli and roast it until it turns golden brown, stirring continuously to avoid burning. Remove from heat and set aside.

2. In the same pan, pour the milk and bring it to a boil. Reduce the heat to low and simmer for about 10 minutes, stirring occasionally, until the milk thickens slightly.

3. Add the roasted vermicelli to the milk and continue cooking on low heat. Stir occasionally to prevent sticking. Cook for about 8-10 minutes, or until the vermicelli becomes soft and cooked.

4. Add the sugar to the pan and stir well until it dissolves completely. Let it simmer for another 2-3 minutes.

5. Now, add the mango puree to the kheer and mix well. Allow it to simmer for a few more minutes until the flavors blend together.

6. Stir in the cardamom powder and saffron strands (if using). Mix everything well and cook for an additional minute.

7. Turn off the heat and let the kheer cool down to room temperature. You can also refrigerate it for a couple of hours if you prefer chilled kheer.

8. Garnish the mango sevaya kheer with chopped almonds and pistachios.
