Ingredients:

- 2 ripe mangoes, peeled and diced

- 1 cup granulated sugar

- 1 cup water

- 1 tablespoon poppy seeds

- Juice of 1 lemon

Instructions:

1. In a medium-sized saucepan, combine the diced mangoes, sugar, water, and lemon juice. Stir well to combine.

2. Place the saucepan over medium heat and bring the mixture to a boil. Once it starts boiling, reduce the heat to low and let it simmer for about 20 minutes, or until the mangoes have softened and the mixture has thickened slightly.

3. Remove the saucepan from the heat and let it cool for a few minutes. Then, using an immersion blender or a regular blender, puree the mixture until smooth.

4. Return the saucepan to the stove over low heat and add the poppy seeds. Stir well to incorporate them into the syrup.

5. Allow the syrup to simmer for an additional 5 minutes, stirring occasionally.

6. Remove the saucepan from the heat and let the syrup cool completely.

7. Once cooled, strain the syrup through a fine-mesh sieve to remove any fibrous bits or seeds.

8. Transfer the strained syrup to a clean jar or bottle. It can be stored in the refrigerator for up to two weeks.
