Ingredients:

- 1 cup red lentils

- 3 cups water

- 1 tablespoon vegetable oil

- 1 onion, finely chopped

- 2 cloves garlic, minced

- 1 teaspoon ginger, grated

- 1 teaspoon cumin seeds

- 1 teaspoon turmeric powder

- 1 teaspoon coriander powder

- 1/2 teaspoon chili powder (adjust to taste)

- 1 tomato, diced

- Salt to taste

- Fresh cilantro leaves, chopped (for garnish)

- Lemon wedges (for serving)

Instructions:

1. Rinse the lentils thoroughly under cold water until the water runs clear. Drain and set aside.

2. In a medium-sized saucepan, bring the water to a boil. Add the rinsed lentils and reduce the heat to medium-low. Cook the lentils, partially covered, for about 15-20 minutes or until they become tender and start breaking down. Stir occasionally to prevent sticking. If needed, add more water to achieve the desired consistency.

3. While the lentils are cooking, heat the vegetable oil in a separate pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds until fragrant. Then, add the chopped onion and sauté until it turns golden brown, usually around 5-7 minutes.

4. Add the minced garlic and grated ginger to the pan with the onions. Cook for an additional minute, stirring continuously.

5. Reduce the heat to low and add the turmeric powder, coriander powder, and chili powder to the pan. Stir well to coat the onions, garlic, and ginger with the spices. Cook for about a minute to release the flavors.

6. Add the diced tomato to the pan and cook for another 2-3 minutes until the tomato softens.

7. Once the lentils are cooked, add the onion and spice mixture to the lentil pot. Stir well to combine all the ingredients.

8. Season with salt to taste and let the dal simmer for an additional 5-10 minutes to allow the flavors to meld together.

9. Garnish the lentil dal with fresh chopped cilantro leaves.

10. Serve the lentil dal hot with steamed rice or naan bread. Squeeze some lemon juice over the dal before eating for added freshness.
