Ingredients:
- 2 cups cashews
- 1 cup sugar
- 1/2 cup water
- 1/4 tsp cardamom powder
- 1 tbsp ghee
Instructions:
- Grind the cashews in a food processor until they are finely ground.
- In a heavy-bottomed pan, mix the sugar and water and heat over medium heat until the sugar dissolves.
- Increase the heat to high and continue cooking until the mixture reaches a one-string consistency.
- Add the ground cashews and cardamom powder to the sugar syrup and stir well to combine.
- Cook the mixture, stirring constantly, until it thickens and starts to leave the sides of the pan.
- Add the ghee and continue cooking until the mixture forms a smooth ball and starts to leave the sides of the pan.
- Turn off the heat and transfer the mixture to a greased plate.
- Let the mixture cool for a few minutes, then use a knife to cut it into diamond-shaped pieces.
- Allow the kaju barfi to cool completely before serving.
