Kaju Barfi


 

Kaju barfi is a popular Indian dessert made from cashews and sugar. Here is a simple recipe to make kaju barfi at home:


Ingredients:

  • 2 cups cashews
  • 1 cup sugar
  • 1/2 cup water
  • 1/4 tsp cardamom powder
  • 1 tbsp ghee



Instructions:

  1. Grind the cashews in a food processor until they are finely ground.
  2. In a heavy-bottomed pan, mix the sugar and water and heat over medium heat until the sugar dissolves.
  3. Increase the heat to high and continue cooking until the mixture reaches a one-string consistency.
  4. Add the ground cashews and cardamom powder to the sugar syrup and stir well to combine.
  5. Cook the mixture, stirring constantly, until it thickens and starts to leave the sides of the pan.
  6. Add the ghee and continue cooking until the mixture forms a smooth ball and starts to leave the sides of the pan.
  7. Turn off the heat and transfer the mixture to a greased plate.
  8. Let the mixture cool for a few minutes, then use a knife to cut it into diamond-shaped pieces.
  9. Allow the kaju barfi to cool completely before serving.
