Idli Rava Khandvi Recipe

Ingredients:

- 1 cup idli rava (rice semolina)

- 1 cup sour yogurt

- 2 cups water

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon ginger paste

- Salt to taste

- 1 tablespoon oil

- 1 teaspoon mustard seeds

- 1 teaspoon cumin seeds

- A pinch of asafoetida (hing)

- 8-10 curry leaves

- 2 green chilies, finely chopped

- 2 tablespoons grated coconut

- 2 tablespoons chopped cilantro (coriander leaves)

- Lemon wedges for serving

For Tempering:

- 2 tablespoons oil

- 1 teaspoon mustard seeds

- 1 teaspoon sesame seeds

- A pinch of asafoetida (hing)

- 4-5 curry leaves

Instructions:

1. In a mixing bowl, combine the idli rava, sour yogurt, water, turmeric powder, ginger paste, and salt. Mix well to form a smooth batter. Set it aside for 10-15 minutes to allow the rava to absorb the liquid.

2. Grease a large flat plate or a clean countertop with oil.

3. Heat a pan on medium heat and add 1 tablespoon of oil. Once the oil is hot, add mustard seeds and cumin seeds. Allow them to crackle.

4. Add asafoetida, curry leaves, and green chilies to the pan. Saute for a minute.

5. Pour the idli rava batter into the pan and cook on medium heat, stirring continuously to prevent any lumps from forming. Cook until the batter thickens and starts to leave the sides of the pan. It should have a smooth, spreadable consistency.

6. Immediately pour the cooked batter onto the greased plate or countertop. Use a spatula or the back of a large spoon to spread it evenly into a thin layer, about 1/4 inch thick.

7. Allow the mixture to cool down for a few minutes. Once it's cool enough to handle, start rolling it tightly from one end, forming a log.

8. Cut the rolled log into 1-inch thick slices and arrange them on a serving plate.

9. In a small pan, heat 2 tablespoons of oil for tempering. Add mustard seeds and sesame seeds. Allow them to crackle.

10. Add asafoetida and curry leaves to the pan and saute for a few seconds.

11. Pour the tempering over the arranged idli rava khandvi slices.

12. Garnish with grated coconut and chopped cilantro.

13. Serve the idli rava khandvi with chutney of your choice and lemon wedges.
