Coriander Leaves Chutney


         Coriander leaves chutney is a popular condiment in Indian cuisine. It is made from fresh coriander leaves (also known as cilantro), along with other flavorful ingredients. Here's a simple recipe to make coriander leaves chutney:




Ingredients:

  • 2 cups fresh coriander leaves, washed and chopped
  • 1 small onion, roughly chopped
  • 2-3 green chilies, chopped (adjust according to your spice preference)
  • 1-inch piece of ginger, peeled and chopped
  • 2 cloves of garlic
  • Juice of 1 lemon
  • Salt to taste
  • Water (as needed)
  • Optional: a pinch of sugar or jaggery (for slight sweetness)




Instructions:

  1. In a blender or food processor, add the coriander leaves, onion, green chilies, ginger, and garlic. Blend until you get a coarse paste.
  2. Add lemon juice and salt to the mixture. You can also add a pinch of sugar or jaggery for a slight hint of sweetness.
  3. Blend the mixture again, gradually adding water as needed, until you achieve a smooth consistency. The chutney should be thick but pourable.
  4. Taste the chutney and adjust the salt, lemon juice, or spices according to your preference.
  5. Transfer the chutney to a serving bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.
  6. Serve the coriander leaves chutney as a side condiment with various Indian dishes like samosas, pakoras, dosas, sandwiches, or as a dip with chips.
