Chop fenugreek curry




 
Ingredients:

  • 2 cups fenugreek leaves, chopped
  • 1 cup gram flour (besan)
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 2-3 green chilies, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • Oil for frying



Instructions:

  • In a bowl, combine the chopped fenugreek leaves and gram flour. Add a little water at a time and mix well to form a thick batter.
  • Heat oil in a deep pan or kadhai for frying. Take small portions of the fenugreek batter and drop them gently into the hot oil. Fry until they turn golden brown and crispy. Remove them from the oil and drain on a paper towel to remove excess oil.
  • In a separate pan, heat a little oil. Add the chopped onions and sauté until they turn translucent.
  • Add the ginger-garlic paste and sauté for a minute until the raw smell disappears.
  • Add the chopped tomatoes and cook until they become soft and mushy.
  • Add turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for a couple of minutes to blend the flavors.
  • Add the fried fenugreek fritters (chop) to the tomato-onion mixture and mix gently. Cook for another 2-3 minutes on low heat to allow the flavors to combine.
  • Serve hot with roti, paratha, or rice.
