Ingredients:
- 1 cup cabbage, finely chopped
- 1 cup green onions (spring onions), finely chopped
- 1 cup gram flour (besan)
- 2 tablespoons rice flour
- 1 teaspoon ginger, grated
- 1 teaspoon garlic, minced
- 1 green chili, finely chopped (adjust to taste)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon garam masala
- 1/2 teaspoon cumin seeds
- Salt to taste
- Oil for deep frying
Instructions:
- In a mixing bowl, combine the chopped cabbage, green onions, ginger, garlic, green chili, and cumin seeds.
- Add gram flour, rice flour, turmeric powder, red chili powder, garam masala, and salt to the bowl. Mix well to combine all the ingredients.
- Gradually add a little water to the mixture and mix until you achieve a thick batter consistency. The vegetables should be well coated with the batter.
- Heat oil in a deep pan or kadai for frying the pakodas.
- Once the oil is hot, take small portions of the batter and drop them gently into the oil. Fry the pakodas in batches, making sure not to overcrowd the pan.
- Fry the pakodas on medium heat until they turn golden brown and crispy. Flip them occasionally to ensure even frying.
- Once the pakodas are cooked, remove them from the oil using a slotted spoon and drain excess oil on a paper towel.
- Repeat the frying process for the remaining batter until all the pakodas are done.
- Serve the cabbage and green onion pakodas hot with mint chutney, tamarind chutney, or ketchup.
